Episode #19 - Salmon w/ light fare

Salmon Patties w/ Dill Sauce
Lemon Parmesan Broccoli
Homemade Granola Bars

 

Salmon Patties:

2 cans (14 3/4 oz.) salmon, drained, bones & skin removed
2 eggs
1 cup milk
2 cups crushed crackers (butter-style best)
1 cup oatmeal
1/2 cup finely chopped red onion
1 t. garlic salt
2 t. dill weed
1 t. pepper
1 T. butter
1 T. olive oil

In a large bowl combine all ingredients. Shape into patties. Melt butter and olive oil in a large skillet. Gry patties until golden brown on both sides. Makes 8-10 large patties or 16-18 small patties for appetizers. Serve with dill sauce.

Dill Sauce:

1/2 cup Greek yogurt
1/4 cup mayo
1 T. fresh lemon juice
1 T. fresh lemon zest
2 T. fresh chopped dill or 1 T dried dill
1/2 t. paprika
salt & pepper to taste

Combine all ingredients. Chill. Serve as dollops on top of salmon patties.
Note: would also make a good veggie dip.

 

Lemon Parmesan Broccoli

3-4 cup water
1 large head of broccoli (washed & cut into portion/serving sizes)
1 fresh lemon (cut in 1/2)
1 t. salt
3 T. melted butter
1/2 cup grated parmesan cheese

Place broccoli in steamer with water and squeezed lemon juice. Add the whole lemon to the water. Add salt to water. Steam broccoli until tender but still dark green and crisp. Do not overcook! Plate broccoli, drizzle with melted butter and sprinkle cheese over broccoli. Serve immediately.

 

Homemade Granola Bars

2c old-fashioned oatmeal
1 cup sliced almonds
1/2 cup chopped pecans
1/2 cup shredded coconut
1/2 cup wheat germ (or flax seed meal)
1 cup dried cranberries or dried cherries
1/2 cup chocolate chips

Toss all dry ingredients together, set aside.

3 T. butter
2/3 cup honey
1/4 cup brown sugar
1 T. vanilla
1/4 t. sea salt

Place ingredients in a small saucepan and bring to a boil over medium heat. Cook for 1 minute. Pour over dry ingredients and mix well. Butter an 8x12 inch baking pan and line it with parchment paper. Pour mixture into baking dish. Bake at 350° for 25 to 30 minutes or until golden brown. Cool for 2 hours before cutting into squares.


Note: any dried fruit can be substituted. Wrap squares individually for a "pick-up-and-go" snack.
